Preparation

Blend bananas, egg yolk, sugar, corn oil, flour, baking powder, baking soda, and salt in Thermomix for 30 seconds at Speed 4. Set aside.

Place egg whites into a clean, dry Thermomix bowl with butterfly inserted. Whisk at Speed 3.5.

Gradually add caster sugar through the MC hole while whisking. Continue until soft peaks form.

Fold egg white mixture into banana batter in 3 portions using a whisk or spatula.

Pour batter into an 18cm chiffon cake tin. Tap to remove air bubbles.

Bake in a preheated oven at 160°C for 35–40 minutes.

Invert cake tin immediately after baking and let it cool completely.

Once cooled, remove the cake from the tin and serve.
