Preparation

Cream 250g room temperature butter with sugar at Speed 4 for 3 minutes, until light and fluffy.

In a mixing bowl, cream room temperature butter with sugar (or less, to taste) on Speed 4 for 3 minutes, until light and fluffy.

Add 4 eggs, 60g milk, and 2 tsp vanilla extract. Mix at Speed 4 for 10 seconds until just combined.

Add flour and baking powder. Mix at Speed 3 for 10 seconds. Scrape down the sides and fold with a spatula.

Transfer 300g of batter to a separate bowl. Mix in 1½ tbsp cocoa powder and 2 tbsp milk until smooth.

Pour vanilla batter into a lined baking pan. Layer with chocolate batter. Repeat, then swirl gently with a skewer to marble.

Bake in a preheated oven at 180°C for 35 minutes, or until a skewer comes out clean. If using a deeper pan, baking may take up to 1 hour.
