Preparation

Place a mixing bowl on top of a mixing bowl lid, put the chicken pieces into the mixing bowl. Add light soy sauce, oyster sauce, dark soy sauce, cooking wine, ground white pepper, sugar and corn starch. Mix the chicken and marinade ingredients together in the mixing bowl until well combined. Let the chicken marinate in the mixture for about 30 minutes to allow the flavors to meld together.
