Place a large bowl on Thermomix® mixing bowl lid, pour in water, and set it aside. Attach the butterfly whisk. Crack eggs into the TM bowl and whisk for 10 sec | Speed 3.

Without the measuring cup, continue whisking for another 10 sec | Speed 3. Simultaneously, pour water through the hole in the mixing bowl lid. Prepare 4 heat- resistant molds (7 cm in diameter) on the Varoma tray. Divide mixture between 4 small, heat-resistant bowls, cups or ramekins that fit comfortably on Varoma tray and set aside. Clean mixing bowl.

Pour 500 grams of water into the TM bowl. Place the Varoma into position and steam for 18 min | Varoma | Speed 2. Once steamed, drizzle light soy sauce and fried shallot oil over each steamed egg. Serve hot.
